ITALIAN SAUSAGE DUMP CASSEROLE


INGREDIENTS

2 lbs Italian sausage, hot or mild 4 potatoes, cut in chunks 1 green bell pepper, seeded and sliced 2 cloves minced garlic 1 small onion, diced 1 (28 ounce) can crushed tomatoes 1 teaspoon dried basil salt and pepper


DIRECTIONS

Brown sausage in saute pan, then place in 9x13 baking dish. Place potatoes, peppers, onion and garlic on top of sausage. Pour crushed tomatoes over and sprinkle with basil, salt and pepper to taste. Cover and bake at 350 degrees for 50 minutes or until done. Remove cover and bake 20 minutes more.

ITALIAN SAUSAGE AND PEPPERS


INGREDIENTS

2 lbs Italian sausage or 2 lbs Polish kielbasa, cut into 2 inch pieces (my favorite is Kiebasi) 1 large green pepper, sliced 1 large onion, sliced 1 tablespoon vegetable oil 1 can stewed tomatoes 1?2 cup water 1 tablespoon chili powder 1?2 teaspoon garlic powder 1 -2 tablespoon italian seasoning (depending on taste) 1 teaspoon lemon pepper 1?4 teaspoon dried oregano 1 teaspoon salt (or to taste) 1 -2 teaspoon sugar (again, depending on taste) 1?2 cup catsup 2 teaspoons cornstarch (optional) 4 teaspoons water (optional)


DIRECTIONS

Saute sausage pieces, green pepper and onion in vegetable oil until vegetables are tender. Add remaining ingredients, cover and cook over low heat for 30 minutes. If a thicker sauce is desired, combine cornstarch and water and stir into mixture until thickened after dish has cooked 30 minutes. Serve over noodles or spaghetti.

ITALIAN ROAST PORK LOIN


INGREDIENTS

3 lbs pork loin roast 2 tablespoons rosemary 2 tablespoons minced garlic 1 teaspoon salt 1 teaspoon pepper 2 tablespoons butter 1 small onion, chopped 1?4 cup olive oil


DIRECTIONS

Oven at 350F. Trim fat from pork. Combine rosemary, garlic, salt, pepper, and olive oil. Melt butter in roasting dish and then place onions over top of the butter. Rub rosemary mixture all over pork loin. Sear on all sides in a hot skillet. Place pork on top of onions in roasting pan and then cover with foil. Bake for an hour or until meat thermometer reads 160F. To make a real tasty onion gravy for the meat, combine 1 tablespoon of flour in 1 cup of cold water. Pour pan drippings with onions into a small sauce pot and bring to a gentle boil. Add water and flour mixture. Whisk and boil until thickened. Serve with pork loin roast.

ITALIAN PEASANT BREAD FOR BREAD MACHINE


INGREDIENTS

3?4 cup water 2 tablespoons olive oil 2 cups flour 1 tablespoon salt 1 1?2 tablespoons sugar 1 1?2 tablespoons rosemary 1 tablespoon yeast additional rosemary (to garnish) salt (to garnish)


DIRECTIONS

Place ingredients, according to manufacturer's directions into your bread machine. (some call for all liquids, or all dry ingredients first, so know your machine) Set machine to "dough cycle" and wait. (This takes most machines about an hour and a half for a full cycle). Remove from machine when cycle is complete and place on a lightly greased baking sheet. Shape dough by hand, into a rectangular mound, spreading kind of thin, maybe an inch or two of thickness. Cover and let rise in a warm place for about an hour or until doubled in size. (This is a good time to go ahead and turn the oven on to preheat and help warm the kitchen). Brush with a little olive oil, sprinkle with rosemary and salt if desired. (This is the way its done at Macaroni Grill). Bake at 375F for 20-25 minutes until crust is golden and crispy. Bread is meant to be a flatter shape and not a high rising bread. Have everyone tear their pieces of bread with their hands,and serve with olive oil flavored with fresh ground pepper.

INGREDIENTS

2 cups sugar 1?2 lb butter, melted 1?4 cup anise seed 1?4 cup anisette or 1/4 cup anise-flavored liqueur 3 tablespoons whiskey (I always use Whiskey) or 2 teaspoons vanilla (I always use Whiskey) 6 eggs 5 1?2 cups all-purpose flour 3 teaspoons baking powder 2 cups coarsely chopped almonds


DIRECTIONS

In a large bowl, stir together sugar,butter,anise seeds,anisette, and whiskey;(I use mixer) Beat in eggs. In another bowl, stir together flour and baking powder. Gradually add to sugar mixture, blending thoroughly,Mix in almonds. Cover tightly with Plastic wrap and refrigerate for 2 to 3 hours. Directly on greased baking sheets,shape dough with hands to form flat loaves about 1/2 inch thick,2 inches wide, as long as baking sheets. Place loaves parallel and 4 inches apart,(this make 6 loaves). Bake in a 375 degrees oven for 20 minutes or until lightly browned. Remove loaves from oven and let cool on baking sheets until you can touch them. Cut diagonally into 1/2 to 3/4-inch-thick slices;Place slices close together (on same baking sheet, cut sides down} on baking sheets. Bake 375 degree oven for 15 more minutes or until lightly toasted. Transfer to racks to cool;Store air tight container.

INGREDIENTS

1 lb mushroom 1 1?2 cups white vinegar 1?2 cup water 1 teaspoon salt 1?2 teaspoon red pepper flakes 4 garlic cloves 1 teaspoon fresh parsley or 1 teaspoon dried oregano extra virgin olive oil


DIRECTIONS

Boil vinegar and water. Wash, clean mushrooms. If small, leave whole. If large, cut and quarter, slice them so they are not too big. Cook for 5 minutes. Drain liquid. I like to squeeze out some of the liquid out of mushrooms. Place in quart size glass jar, add garlic, spices and drizzle of oil. Shake it up and refrigerate. Can stay up to two weeks if they last that long.

ITALIAN HERB BREAD


INGREDIENTS

1 tablespoon dry yeast 2 cups water 2 tablespoons sugar 1?4 cup olive oil 1 tablespoon sea salt 2 tablespoons fresh basil 2 tablespoons fresh oregano 1 teaspoon garlic powder 1 teaspoon onion powder 1?2 cup freshly grated pecorino romano cheese 6 cups all-purpose flour


DIRECTIONS

Mix yeast, warm water and sugar together in a large bowl. Set aside for five minutes, or until mixture becomes foamy. Stir in olive oil, salt, herbs, garlic powder, onion powder, cheese and 3 cups flour into the yeast mixture. Gradually mix in next three cups of flour. (Dough will be stiff). Knead for 5 to 10 minutes, or until it is smooth and elastic. Place in an oiled bowl, turning to cover sides with oil. Cover with a damp linen towel, or plastic wrap. Let rise for 1 hour, or until dough has doubled. Punch down to release all the air. Shape into two loaves. Place loaves on a greased cookie sheet, or into two 9x5 inch, greased pans. Allow to rise for 1/2 hour again, until doubled in a warm place. Bake at 350 degrees for 35 minutes. Remove loaves from pans and let cool on wire racks for at least 15 minutes, before slicing.
