JAGACIDA (JAG) - BEANS AND RICE FROM CAPE VERDE


INGREDIENTS

2 tablespoons oil 1 medium onion 3 cups rice 6 cups water 1 (15 ounce) can kidney beans 1 tablespoon smokey paprika 2 bay leaves salt pepper


DIRECTIONS

Cut up onions in a 2 quart pan and simmer until golden brown in oil. Add 6 cups of water to onions, paprika, and bay leaves. Season with salt and pepper totaste. Bring to a boil and add 3 cups of rice. Lower heat, add beans (), cover pan and simmer for 25 minutes or until water is absorbed and rice is cooked. Turn off stove and let stand.

IT'S THYME FOR RICE PILAF


INGREDIENTS

4 tablespoons butter or 4 tablespoons margarine 1 cup chopped onion 1 cup finely diced carrot 1?2 cup thinly sliced celery 1?2 cup chopped green pepper 2 cloves garlic, minced 1 1?2 cups uncooked long-grain rice 1 3?4 cups fat-free low-sodium chicken broth 1 cup water 1?2 cup frozen peas 1?4 cup chopped fresh parsley 1 tablespoon chopped fresh thyme or 1 teaspoon dried thyme leaves 1?4 teaspoon Tabasco sauce, to taste 1?2 teaspoon salt, to taste 1?8 teaspoon black pepper, to taste


DIRECTIONS

Heat 2 tablespoons butter in a large saucepan; add onion, carrots, celery, green pepper, and garlic, cooking until tender. Remove vegetables from pan and set aside. Heat remaining 2 tablespoons of butter in pan; add rice and cook, stirring constantly, until rice is light brown. Do not burn rice. Stir in chicken broth, water, frozen peas, cooked vegetables, parsley, thyme, Tabasco, and salt and pepper to taste. Bring mixture to a boil, then reduce heat and simmer, covered, for 15-20 minutes or until liquid is absorbed and rice is tender. Fluff with fork before serving. Tip: if rice seems wet, place clean dishtowel firmly between lid and pan; let rest for 10-15 minutes while towel absorbs excess liquid.

DIRECTIONS

Mix together the mayonnaise, sour cream, salad dressing mix, tomatoes, bell pepper, scallions, and parsley. Cover tightly and refrigerate for at least 2 hours and up to 48 hours before serving with the cut up vegetables and breadsticks.

ITALIAN STYLE STEWED TOMATOES -GOOD FOR CANNING


INGREDIENTS

5 quarts tomatoes (I use plum or roma) 4 cups chopped onions 4 cups chopped sweet peppers (I use red & green) 1?4 cup minced garlic 1?4 cup chopped fresh oregano 2 tablespoons olive oil 1 tablespoon sugar


DIRECTIONS

Blanch, peel, core and quarter tomatoes. Heat olive oil in a large dutch oven. Add garlic and oregano, cook till garlic is tender and oregano is fragrant (about 2 minutes). Add chopped onion and peppers and cook until tender (about 5 min). Add tomatoes and sugar, simmer uncovered about 45 min or until desired consistency (you will need to cook longer if tomatoes are watery). Place in hot sterilized mason jars, and place in hot water bath, bring water back to the boil and boil for about 20 minutes longer, remove and let cool, re-bath any jars that don't seal. NOTE: Some people feel that the hot water bath method is not safe for this recipe, and that a pressure canning method should be used, however, I have always done these this way with no problem. I leave this up to your discretion.

2 cups slivered cooked ham 1 clove garlic, minced 1 tablespoon butter or 1 tablespoon margarine 8 ounces thin spaghetti 1?2 cup grated parmesan cheese 1?4 cup chopped parsley 3 eggs, slightly beaten 1?4 cup sliced black olives salt and pepper


DIRECTIONS

Melt butter in a large skillet and lightly saute the ham and garlic. Cook spaghetti, drain and add to skillet. Reduce heat to low, stir in cheese, half the parsley, eggs and olives. Remove from heat and toss with salt and pepper to taste. Sprinkle with remaining parsley before serving.

ITALIAN SAUSAGE SANDWICH


INGREDIENTS

3?4 lb bulk Italian sausage (hot or mild) 1 1?2 cups spaghetti sauce (from a jar) 1?2 cup sliced pitted ripe olives (black or green) 1 red onion, sliced in half rings 1?2 sweet red pepper, sliced in strips 4 French rolls 4 slices mozzarella cheese (approx 6 ounces)


DIRECTIONS

Preheat the oven to 375F. In a skillet brown sausage. Drain off the fat, stir in the sauce and olives, heat through. Split rolls lengthwise without cutting through opposite side. Hollow out buns slightly, halve cheese slices lengthwise. Place a piece of cheese on bottom half of each roll. Divide meat mixture evenly among the 4 rolls, top with onion and sweet peppers. Place another cheese slice on top and close the rolls. Wrap each sandwich in foil and seal, place on a baking sheet and bake the wrapped sandwiches in the oven for approx 15 minutes. Unwrap serve and enjoy!
